Sweet Potato and Black Bean Tacos

Flavorful and nutritious vegetarian tacos with roasted sweet potatoes, black beans, and a zesty lime crema.
Ingredients:
2 large sweet potatoes (peeled and diced)
1 can (15 oz) black beans (drained and rinsed)
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
8 small corn tortillas
Shredded lettuce, diced tomatoes, and avocado slices for toppings
Instructions
Preheat the oven to 400°F (200°C).
Toss sweet potatoes with chili powder, cumin, smoked paprika, salt, and pepper. Roast for 20 minutes or until tender.
In a pan, heat black beans until warmed through.
Warm the corn tortillas in a dry skillet or microwave.
Assemble tacos with sweet potatoes, black beans, shredded lettuce, diced tomatoes, avocado slices, and a drizzle of lime crema.
