Beef and Vegetable Stew

Hearty and flavorful stew made with tender beef, assorted vegetables, and savory broth, prepared in the Instant Pot.
Ingredients:
1.5 lbs stewing beef (cut into chunks)
2 cups potatoes (cubed)
1 cup carrots (sliced)
1 cup celery (chopped)
1 onion (diced)
3 cloves garlic (minced)
4 cups beef broth
1 can (14 oz) diced tomatoes
2 tablespoons tomato paste
1 teaspoon dried thyme
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Season beef chunks with salt and black pepper.
In the Instant Pot, combine beef, potatoes, carrots, celery, onion, garlic, beef broth, diced tomatoes, tomato paste, and dried thyme.
Close the lid, set to sealing, and cook on high pressure for 20 minutes.
Allow a natural release for 10 minutes, then quick release any remaining pressure.
Garnish with fresh parsley before serving.
