Quinoa and Chickpea Salad

A protein-packed salad with quinoa, chickpeas, and a variety of fresh vegetables tossed in a lemony vinaigrette.
Ingredients:
1 cup quinoa (cooked)
1 can (15 oz) chickpeas (drained and rinsed)
1 cucumber (diced)
1 bell pepper (diced)
1/2 red onion (finely chopped)
1/4 cup fresh parsley (chopped)
1/4 cup feta cheese (crumbled)
Juice of 1 lemon
3 tablespoons olive oil
Salt and black pepper to taste
Instructions
In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, fresh parsley, and feta cheese.
In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
Pour the dressing over the salad and toss until well combined.
Serve chilled.
