A protein-packed salad with quinoa, chickpeas, and a variety of fresh vegetables tossed in a lemony vinaigrette.

Ingredients:
  • 1 cup quinoa (cooked)

  • 1 can (15 oz) chickpeas (drained and rinsed)

  • 1 cucumber (diced)

  • 1 bell pepper (diced)

  • 1/2 red onion (finely chopped)

  • 1/4 cup fresh parsley (chopped)

  • 1/4 cup feta cheese (crumbled)

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • Salt and black pepper to taste

Instructions
  1. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, fresh parsley, and feta cheese.

  2. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.

  3. Pour the dressing over the salad and toss until well combined.

  4. Serve chilled.
