Meaty portobello mushrooms stuffed with fresh tomatoes, mozzarella, and basil for a flavorful vegetarian dish.

Ingredients:
  • 2 large portobello mushrooms

  • 1 cup cherry tomatoes (sliced)

  • 1/2 cup fresh mozzarella balls (or diced mozzarella)

  • Fresh basil leaves

  • 2 tablespoons balsamic glaze

  • 2 tablespoons olive oil

  • Salt and black pepper to taste

Instructions
  1. Preheat the oven to 375°F (190°C).

  2. Clean the portobello mushrooms and remove the stems.

  3. In a bowl, toss cherry tomatoes, mozzarella, fresh basil, olive oil, salt, and black pepper.

  4. Stuff each portobello mushroom with the tomato and mozzarella mixture.

  5. Bake for 20-25 minutes or until mushrooms are tender.

  6. Drizzle with balsamic glaze before serving.
