Caprese Stuffed Portobello Mushrooms

Meaty portobello mushrooms stuffed with fresh tomatoes, mozzarella, and basil for a flavorful vegetarian dish.
Ingredients:
2 large portobello mushrooms
1 cup cherry tomatoes (sliced)
1/2 cup fresh mozzarella balls (or diced mozzarella)
Fresh basil leaves
2 tablespoons balsamic glaze
2 tablespoons olive oil
Salt and black pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Clean the portobello mushrooms and remove the stems.
In a bowl, toss cherry tomatoes, mozzarella, fresh basil, olive oil, salt, and black pepper.
Stuff each portobello mushroom with the tomato and mozzarella mixture.
Bake for 20-25 minutes or until mushrooms are tender.
Drizzle with balsamic glaze before serving.
