Stuffed Bell Peppers with Quinoa and Black Beans

Colorful bell peppers filled with a tasty mixture of quinoa, black beans, and spices.
Ingredients:
4 large bell peppers (halved and seeds removed)
1 cup quinoa (cooked)
1 can (15 oz) black beans (drained and rinsed)
1 cup corn kernels (fresh or frozen)
1 cup tomato (diced)
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Shredded cheese for topping (optional)
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, mix together cooked quinoa, black beans, corn, diced tomato, cumin, chili powder, salt, and pepper.
Stuff each bell pepper half with the quinoa mixture.
Place the stuffed peppers in a baking dish and cover with aluminum foil.
Bake for 25-30 minutes or until the peppers are tender.
If desired, top with shredded cheese and bake for an additional 5 minutes.
