Salmon and Avocado Salad

EASY
A light and refreshing salad featuring grilled salmon, creamy avocado, and a zesty lemon dressing.
Ingredients:
2 salmon fillets
4 cups mixed greens (spinach, arugula, or your choice)
1 avocado (sliced)
1 cup cherry tomatoes (halved)
1/4 cup red onion (thinly sliced)
1/4 cup feta cheese (crumbled)
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and black pepper to taste
Instructions
Season the salmon fillets with salt and pepper and grill for 3-4 minutes per side or until cooked through.
In a large bowl, combine mixed greens, sliced avocado, cherry tomatoes, red onion, and crumbled feta.
Top the salad with grilled salmon fillets.
In a small bowl, whisk together olive oil and lemon juice. Drizzle over the salad.
Toss gently and serve immediately.
