EASY

A light and refreshing salad featuring grilled salmon, creamy avocado, and a zesty lemon dressing.

Ingredients:
  • 2 salmon fillets

  • 4 cups mixed greens (spinach, arugula, or your choice)

  • 1 avocado (sliced)

  • 1 cup cherry tomatoes (halved)

  • 1/4 cup red onion (thinly sliced)

  • 1/4 cup feta cheese (crumbled)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and black pepper to taste

Instructions
  1. Season the salmon fillets with salt and pepper and grill for 3-4 minutes per side or until cooked through.

  2. In a large bowl, combine mixed greens, sliced avocado, cherry tomatoes, red onion, and crumbled feta.

  3. Top the salad with grilled salmon fillets.

  4. In a small bowl, whisk together olive oil and lemon juice. Drizzle over the salad.

  5. Toss gently and serve immediately.
