A nutritious and colorful salad featuring quinoa, roasted vegetables, and a zesty dressing.

Ingredients:
  • 1 cup quinoa (cooked)

  • 1 cup cherry tomatoes (halved)

  • 1 cup cucumber (diced)

  • 1 cup bell peppers (assorted colors, diced)

  • 1/2 red onion (thinly sliced)

  • 1/4 cup feta cheese (crumbled)

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste

  • Fresh basil for garnish

Instructions
  1. Preheat the oven to 400°F (200°C).

  2. Toss cherry tomatoes, cucumber, bell peppers, and red onion with olive oil, salt, and pepper. Roast in the oven for 20 minutes.

  3. In a large bowl, combine cooked quinoa, roasted vegetables, and crumbled feta.

  4. Drizzle with balsamic vinegar and toss to combine.

  5. Garnish with fresh basil before serving.
