Quinoa Salad with Roasted Vegetables

A nutritious and colorful salad featuring quinoa, roasted vegetables, and a zesty dressing.
Ingredients:
1 cup quinoa (cooked)
1 cup cherry tomatoes (halved)
1 cup cucumber (diced)
1 cup bell peppers (assorted colors, diced)
1/2 red onion (thinly sliced)
1/4 cup feta cheese (crumbled)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Fresh basil for garnish
Instructions
Preheat the oven to 400°F (200°C).
Toss cherry tomatoes, cucumber, bell peppers, and red onion with olive oil, salt, and pepper. Roast in the oven for 20 minutes.
In a large bowl, combine cooked quinoa, roasted vegetables, and crumbled feta.
Drizzle with balsamic vinegar and toss to combine.
Garnish with fresh basil before serving.
