Quinoa and Chickpea Bowl

A vibrant and nourishing bowl featuring quinoa, roasted chickpeas, colorful vegetables, and a tahini dressing.
Ingredients:
1 cup quinoa (cooked)
1 can (15 oz) chickpeas (drained and rinsed)
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Mixed greens, cherry tomatoes, cucumber, avocado, and shredded carrots for bowl assembly
Tahini dressing for drizzling
Instructions
Preheat the oven to 400°F (200°C).
Toss chickpeas with olive oil, cumin, smoked paprika, salt, and pepper. Roast for 20 minutes or until crispy.
Assemble bowls with cooked quinoa, roasted chickpeas, mixed greens, cherry tomatoes, cucumber, avocado slices, and shredded carrots.
Drizzle with tahini dressing before serving.
