Quinoa and Black Bean Stuffed Sweet Potatoes

Nutrient-packed sweet potatoes filled with a savory mixture of quinoa, black beans, and fresh veggies.
Ingredients:
4 medium sweet potatoes
1 cup quinoa (cooked)
1 can (15 oz) black beans (drained and rinsed)
1 cup corn kernels (fresh or frozen)
1 cup cherry tomatoes (diced)
1/4 cup red onion (finely chopped)
1/4 cup fresh cilantro (chopped)
1 teaspoon ground cumin
Juice of 1 lime
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Pierce sweet potatoes with a fork and bake for 40-45 minutes or until tender.
In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, cilantro, cumin, lime juice, salt, and pepper.
Once sweet potatoes are done, slice them open and fluff the insides with a fork.
Spoon the quinoa and black bean mixture into the sweet potatoes.
Serve warm.
