Mediterranean Quinoa Stuffed Peppers

Colorful bell peppers filled with a Mediterranean-inspired mixture of quinoa, olives, tomatoes, and feta cheese.
Ingredients:
4 large bell peppers (halved and seeds removed)
1 cup quinoa (cooked)
1 cup cherry tomatoes (halved)
1/2 cup Kalamata olives (pitted and sliced)
1/2 cup crumbled feta cheese
1/4 cup fresh parsley (chopped)
1 teaspoon dried oregano
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, combine cooked quinoa, cherry tomatoes, olives, feta cheese, fresh parsley, dried oregano, olive oil, salt, and pepper.
Stuff each bell pepper half with the quinoa mixture.
Place the stuffed peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the top is golden.
