Slices of eggplant layered with marinara sauce and melted cheese, baked to perfection for a satisfying vegetarian dish.

Ingredients:
  • 2 large eggplants (sliced)

  • 2 cups marinara sauce

  • 2 cups shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 1 cup breadcrumbs

  • 2 eggs (beaten)

  • Fresh basil for garnish

  • Salt and black pepper to taste

Instructions
  1. Preheat the oven to 375°F (190°C).

  2. Dip eggplant slices into beaten eggs, then coat with breadcrumbs.

  3. In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and Parmesan. Repeat until ingredients are used.

  4. Bake for 35-40 minutes or until the top is golden and bubbly.

  5. Garnish with fresh basil before serving.
