Eggplant Parmesan

Slices of eggplant layered with marinara sauce and melted cheese, baked to perfection for a satisfying vegetarian dish.
Ingredients:
2 large eggplants (sliced)
2 cups marinara sauce
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup breadcrumbs
2 eggs (beaten)
Fresh basil for garnish
Salt and black pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Dip eggplant slices into beaten eggs, then coat with breadcrumbs.
In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and Parmesan. Repeat until ingredients are used.
Bake for 35-40 minutes or until the top is golden and bubbly.
Garnish with fresh basil before serving.
